How can you trust that food at the grocery store in cans and boxes that state certified organic is really organic ?

I see everywhere at the grocery store that more and more products have the certified organic symbol on them. However I wonder how can we trust that they really are organic. It seems like the grocery industry has jumped on the band wagon and this is the new "low carb" fad this year.

When purchasing pre-packaged foods in grocery stores, the only way that you can be sure is to look for the term "Certified Organic" on the label. It certifies that the producer of the food has met certain standards regarding the growing and production of the product.

While there have been some attempts to weaken the standards, at this point they are still very good.

There's a great write-up over at Wikipedia - http://en.wikipedia.org/wiki/Organic_certification

And, remember, when shopping at a Farmer's Market, smaller farms often can't afford to get or are still working on getting their organic certification. Be sure and ask, because a lot of the time, you will find that the produce is actually organically grown, even though they can't call it that, because they are not certified.
